Best in the business: Lauren Kellaway, UK Drywite Fish Frier of the Year

In January last year, Lauren Kellaway, 24, from Kellaway’s Fish and Chips in Truro, beat five other finalists to win the title, ‘Drywite Young Fish Frier of the Year.’ 

It’s a standout category at the National Fish & Chip Awards, a UK-wide competition celebrating ‘true excellence in the fish and chip industry.’ 

Head Judge, Mark Drummond remarked: “Lauren’s skills, knowledge and passion shone through, making her a very deserving winner. It’s encouraging to know that the future of the industry is in such good hands.”

The winning difference

Lauren had faced an intensive, skills-based assessment followed by a personal interview at the National Federation of Fish Friers’ (NFFF) headquarters in Leeds. Then there was a mystery shop visit to judge her practical skills within the working environment.

She believes personal service made the difference. “The judges saw we had a really good relationship with our local customers and knew all their names.”

Since winning, Lauren has travelled the UK, visiting exhibitions and speaking to other young friers. She was even invited to the Faroe Islands Seaman’s Festival (Sjómannadagur), the highlight of which involved serving 9,000 portions of fish and chips in just 12 hours. 

Lauren also helped judge this year’s awards and was involved with the training scheme at the NFFF. Not bad for a girl who’d been unsure what to do after completing her studies. “I’d worked here when I was sixteen, then I went to college. When I got back, I needed a job, so I learned how to fry and took it from there.”
